Valentine's Day Empire Cookies


Here's an easy Valentine's Day baking project. Empire cookies are a familiar and decadent treat that you can easily make at home. Normally, these sandwich cookies are cut with a 2" scalloped round, but replace that with a heart shaped cookie cutter and you have yourself an updated seasonal classic. They make the perfect Valentine's cookie, with creamy white icing, rich raspberry jam and a bright red candied cherry piece on top!


The best empire cookie recipe that I have tried is by Anna Olsen and can be found at the Food Network site. The recipe is straight forward and easy to follow, and the resulting cookies are soft, rich and just sweet enough. Overall, a delightful dessert... or meal (depends how you're feelin', I guess).

Have I mentioned that I'm obsessed with mini clothespins? They're so cute and I'll be darned if I can't find about a million uses for them. This is my latest: easy cookie packaging! A paper lunch bag, dollar store heart doilie, and two mini clothespins makes for gift worthy packaging.
